This salad is a high-protein, high-fiber meal that keeps you full for hours. It’s a satisfying, nutrient-dense option for lunch or dinner that comes together quickly, with the perfect sweetness and crunch from the EverCrisp® apple.

Ingredients

    • 1 EverCrisp® apple, chopped
    • 2 cups mixed greens
    • 1 cup broccoli slaw
    • â…“ cup edamame
    • ½ avocado, chopped
    • ¼ cup marinated artichoke hearts
    • 2 Tbsp pepitas
    • 2 Tbsp feta
    • ¼ cup lemon juice
    • â…› cup olive oil
    • ½ tsp salt
    • ½ tsp black pepper 
      2 x 4 oz. grilled salmon filets, seasoned with paprika, salt, and pepper 

      Directions

        1. Add the mixed greens, broccoli slaw, edamame, avocado, and artichoke hearts to a mixing bowl.

        2. To make the dressing, mix together lemon juice, olive oil, salt, and black pepper.

        3. Dress the salad and garnish with pepitas and feta cheese.

        4. Top with salmon and enjoy!
